Bhe’s story about the day she made her traditional Coconut Macaroons Recipe features another sweet surprise – she found a ring that was near and dear to her that somehow magically appeared after days of searching. Where did she find it? Underneath her tablecloth!
Esther, also know as Bhe to her friends lives between Saarbrücken in Germany and a tiny town on the border of Belgium. Below is the recipe for her Coconut Macaroons.

“OMG… did so much crying yesterday because I thought I had lost my precious ring, like, not precious monetary-wise, but to me. it was one of the first gifts from my partner, before we even considered us partners. I wear it always, if I’m not doing housework. It makes me feel safer. We looked for it everywhere – on the table, in the sofa, in all bags & purses, on the floor, under the rug, in Tessa’s doggy-bed. We came up with ever more hare brained ideas… and i cried so much. It just was nowhere to be found and then, when I was getting together all my stuff for leaving for the week, I am going “I don’t care from which dimension it folds itself back into this one, I just want it back, so if you find it…” and put my hand onto the table, simply to brace myself, and I put it right on top of the ring! It lay there, under the tablecloth – the tablecloth 3 people individually had taken off, to look on the table… I don’t care. It’s back & I’m not gonna take it off anytime soon! ^_^” -Esther, aka Bhe

Bhe's Coconut Macaroons Recipe Ingredients
- 400g (14 ounces) sweetened condensed milk
- 400g (14 ounces) shredded coconut
- 1 egg white, whipped
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/2 teaspoon orange extract
- 2 pieces of stem ginger, finely chopped
- little round baking wafers
- melted dark chocolate for decorating
Bhe's Coconut Macaroons Recipe Preparation
Preheat oven to 160C (325F). Line baking sheets with foil and arrange rows of baking wafers on the foil. Alternately you could grease and flour the foil, but the macaroons tend to stick. Set aside.
In a large bowl, combine sweetened condensed milk, whipped egg white, vanilla extract, and coconut. Mix well and divide into two bowls.
To one bowl, add the almond extract. Mix well. Wet your hands with water and roll rounded teaspoonfuls into balls, that you lightly press onto the baking wafers. If not using wafers, place them delicately onto the prepared foil.
To the other bowl, add orange extract and chopped stem ginger. Mix well and repeat the procedure.
Bake 15 to 17 minutes or until just lightly golden around edges. Immediately remove from baking sheets (they will stick if allowed to cool!) and cool on wire racks.
When cooled completely, decorate with melted dark chocolate. I always just decorate one kind, to make them more easily distinguishable when serving, but that’s just me…
